OBJECTIVES: 1. Understand the difference between large and small scale food production.
2. Demonstrate proper sandwich production.
3. Understand short-order cookery.
REQUIREMENTS: Attend and participate in daily rotation assignments and complete paperwork regarding these rotations.
Write one essay describing the difference between large and small scale food production.
PREREQUISITES: Culinary Arts Major
