|DESCRIPTION:||Concepts of human nutrition, nutrition education, menu planning, sanitation and food safety with emphasis on preschool children.|
|CONTENT AND TOPICS:||Nutrients & dietary reference intakes; Food Guide Pyramid; Dietary guidelines; Evaluating nutrition information; Nutrition education; Energy nutrients, fats, carbohydrates, protein, vitamins, minerals; Energy needs and weight concerns; Water and fluids; Food labels; Key concepts in feeling children; Infant feeding; the older baby; Toddler and preschool feedings; Federal child nutrition programs; Menu planning (CCFP guidelines); Menu concerns, allergies and food intolerances; Dietary modifications; Feeding environment; Food safety-foodborne illness and personal hygiene; Food storage, preparation and service; Cleaning and sanitizing|
|GOALS AND OBJECTIVES:||1. State and demonstrate principles for food safety and sanitation in food purchases, storage, preparation and service.
2. Explain basic nutrition and food safety principles as it applies to the growth and development of infants and preschool children.
3. Plan activities to teach basic nutrition and food safety concepts to young children.
4. Discuss the roles of the adult and the child in the feeding process.
5. Plan menus for feeding young children following CACFP guidelines.
